Kale pesto recipe

Help! There’s green stuff EVERYWHERE!!! Curly Kale, Cavelo Nero Kale, Chard (not kale but definitely green and leafy!)

We’re chowing down about 3 pounds of the good green stuff every day, yet still it comes. The garden is in full summer song and nothing is going to get in the way of hte march of the kale.

Apart from us, munchers of all things green and gluten free. Which, being a vegetable, kale is. Of course.

So here’s another recipe for kale. You can make kale pesto, and spread it all over kale! How about that for efficient? This was inpsired by a recipe over at Elana’s pantry for Kale and Almond Pesto.

Kale Pesto Recipe

Hand sized bunch of kale, steamed (or whatever leafy green you can lay your hands on)
Couple cloves of garlic. If you like your garlic, use it raw. If you want it mellower, pop it in the water when you steam your kale.
Small handful pine nuts (toast them first if you’re making it dairy free like me – they taste more cheesy that way, honest.)
Small handful parmesan if you’re not dairy free
1/2 teaspoon salt
Enough olive oil for consistency – 4-5 tablespoons probably

Blitz it up and pour it all over a pile of cooked sliced kale, some gluten free pasta, or whatever you fancy really. We’re giving it to the kids to paint with, just to help in the battle against the onslaught of the kale.

Wherever you’re going, remember to take a free gluten free restaurant card with you.
